Simple Low Cal. Recipes for Labor Day Gatherings!
The Labor Day weekend is upon us... Yeah!. It is time to party among the family and friends that are dear, near and true for one more Summer blast before it is all over. Are you ready to let loose for the last major holiday of the Summer Season?
If you are heading out to a barbecue, consider taking a chilled cocktail and some grilled fruit with you; but do so at a level that you will not be forgotten nor be stressed in the process. Remember to keep things easy and simple for you.
Try this easy to make watermelon citrus cocktail virgin or (nah)
And/or a grilled fruit and veggie kabob.
Both are quite easy to whip up without a sweat and takes less than 30 minutes to make together. Leaving one plenty of time to get ready for the party and look good and feel good too.
The Watermelon Lemon-Lime Cocktail
4 cups cubed watermelon, frozen
Juice of 2 limes
Juice of ½ lemon
Ice Cubes 4
Optional: 4 oz. rum
1. Add 4 ice cubes, watermelon cubes, lemon and lime juice in a blender and blend until smooth.
2. Serve as is for a non-alcoholic beverage, or blend in some rum for a real seasonal cocktail.
Veggie Kabob Ingredients
1 Tbsp. avocado oil
1 Tbsp extra virgin olive oil
4 portabella mushrooms, gills and stems removed
2 red bell peppers, halved and seeds removed
4 slices of red onion
2 zucchini, sliced lengthwise into 4 slices each
Pink Himalayan sea salt
Fire up the grill
Brush the oils over the vegetables and sprinkle with pepper and salt. Place the vegetables on the grill and cook for about 5 minutes; flip and cook an additional 3-5 minutes.
To assemble, place a portabella mushroom on a plate and then stack with one slice each of onion's, bell pepper and zucchini and whatever else you want to have this mouth watering treat..
