Homemade Cranberry Sauce

Mid-September until the end of November is cranberry harvesting time; meaning this is the time of year when you must get your cranberries fresh. If you want cranberries; especially homemade cranberries for any other time of the year, you must buy them now and then freeze them for later. The good thing is you can keep them frozen for up to a year with no issues.

Serving Size: 4 - 6

Prep/Boil/Simmer Time: 30 - 45 Minutes

What you need for this recipe:

(2) 8 oz. Cups of Water

(1) lb. on 16 oz of Fresh or Frozen Cranberries

(1) 4 oz. Cup Grade B Maple Syrup

(2) Tablespoons of Fresh Squeezed Orange Juice (Depending on how many servings)

(½) Tablespoon of Lemon Juice

(1) Stick/or ½ Teaspoon Cinnamon

(¼) Teaspoon Ground Nutmeg

(8-10) Medjool Pitted Dates or (1) Tablespoon of Agave

Zest Orange & Lemon Peel

Instructions

Soak the dates in water for 2 to 4 hours. For this recipe, they can be a bit sticky.

Rinse the cranberries and throw out any that are not plump.

In a pot boil water, add the cranberries in and let boil for a good 10 to 12 minutes alone before adding in the other ingredients. If you are using a cinnamon stick vs. cinnamon powder add it in the pot at about the 8-minute mark. Add all the other ingredients in at about 10 to 12 minutes and stir it up. At about 20 minutes into the process turn the eye down and let all the ingredients just simmer. Finish off with the zest of a lemon or an orange peel and sit the sauce in the fridge to chill for about an hour or until ready to serve.

To take this recipe up a notch, add a little protein, omega 3 and fiber by sprinkling some Manitoba Harvest Hemp Seeds on top when ready to serve. This sauce has now become a super healthy protein omega 3 treat.

Cranberry Juice from Cranberries

Whatever is left from the cranberry sauce pot, strain the cranberries out and make a cranberry juice, and add a little bit more maple syrup or agave to balance out the acidity of the orange and lemon. Chill for about an hour or two in the fridge or on ice and serve. Omit the sweetener if you want to do with out the sugar. The sweetness from the orange juice can be enough to suffice.

(½) Tablespoon of Lemon Juice

(1) Teaspoon Cinnamon

(12-15) Medjool Pitted Dates or (1) Tablespoon of Agave
