Amaretto Dairy Free, Egg-Nog for the Holiday's!

This Holiday Season, let’s try to do as much as we can to not increase our pants size, but also to keep food and drinks very tasteful, yet guilt free. Take some time to try our DIY version of Egg Nog without dairy or eggs. This recipe is beyond perfect for you especially if you are lactose intolerant. This recipe is not only simple, it tastes so, so freaking good. Give this vegan nog a try and keep your waist line intact this Thanksgiving and Holiday Season.
*Please note to make 100% homemade Vegan Nog you are going to need to use of a cheese cloth after soaking almond nuts over night of for at least 36 hours. This will help strain the milk/nuts concoction, so you can get more of that creamy beige color appeal and milk consistency.

Prep/Boil/Simmer Time: 20 Minutes to 48 hours (Depending on which method you use)
What you need for this recipe:
(1) 32oz of Almond/Coconut/Cashew/Rice Milk
(6-8) Medjool Pitted Dates or (1) Tablespoon of Maple Syrup
(1) Vanilla Bean (Cut open and scraped out)
(1) Teaspoon of Organic Vanilla Extract
¼ Tablespoon of Ground Cinnamon
¼ Teaspoon of Ground Ginger (Optional)
(1-2) Ounce(s) of Disaronno Amaretto (Optional) +
(1) Cheese Cloth
(1) Strainer
DIY Full Version
If you would like to make your own almond milk you can do so by soaking almonds in water for about 36 to 48 hours. The water will become cloudy due to the coloration of the almonds, the skin will start to loosen up a bit and may fall off. After 24 -48 hours pour off the water. Add the almonds to a high-speed blender like a Blendtec or Vitamix or the likes and 5-6 cups of new water to the blender and blend it up for about 1 to 2 minutes (depending on your blender). Get a strainer and a cheese cloth. Place it over the top of a large glass jar to avoid the pieces of the almonds getting in your milk. From here you can add a sweetener of your choice or you can take some soaked dates, a vanilla bean and (1) teaspoon of natural vanilla extract. and 1/4 tablespoon of cinnamon, ¼ teaspoon of nutmeg and a pinch of ginger to make the ultimate DIY dairy free, egg free, Vegan Nog. If making your own with this method is too much for you, buy some Almond, Coconut, Cashew or Rice milk and add all of the ingredients into your blender and blend it up.
The dates need to soak for at least 2 to 4 hours, so they can blend up easily in the blender.
Once you made your almond milk or use your store purchase milk, just dump it in the blender with all of the other ingredients and blend for 1 to 2 minutes. Pour it in pitcher and let chill, top it off with a few sifts of cinnamon before taking your first sip and you are good to go.
